Want to start your day with a hearty breakfast but don’t have time in the morning? Why not pull out your slow cooker – it’s not just for dinner! Prep some oatmeal to cook overnight and come down in the morning to a hot, delicious breakfast ready to go!
Steel-cut oats works best, as they are the least processed of all oatmeal varieties, meaning they are coarser and maintain their texture after cooking - rolled oats can get a bit mushy overnight.
For 4 servings, start by combining one cup of steel-cut oatmeal with 3 cups of water and a pinch of kosher or Himalayan salt in the pot of your slow cooker. Set to cook on ‘Low’ overnight (or for 6 hours if yours has a timer). Then pick one of the add-ons below, or simply use your imagination!
✅ Substitute full-fat coconut (or almond or cashew) milk for one half of the water in the recipe.
✅ Include ¼ teaspoon vanilla, ½ teaspoon cinnamon & a diced, peeled apple before cooking.
✅ Top cooked oatmeal with fresh berries, chopped nuts, coconut flakes, or chia seeds
